Italian Cream Cake Trifles

The bottom layer is cake, made from scratch, with toasted coconut and finely chopped pecans.  The middle layer is a homemade pudding-like filling.  This is topped with another layer of cake, then homemade cream cheese frosting is swirled on the top and garnished with toasted pecans and coconut.  Serve with a fresh pineapple spear.

If you want to make these trifles quicker and easier, I suppose you could use vanilla pudding for the center layer.  You might also get away with using a yellow cake mix, then adding the toasted coconut, finely chopped pecans, and vanilla.  However, making the homemade cream cheese frosting is an absolute must; it is incredibly awesome!

To make the dessert even more amazing, alternate a bite of the trifle with a bite of fresh pineapple...bite of trifle, bite of pineapple...
