FILET MIGNON

wrapped in Applewood Smoked Bacon

topped with Buttery Mushrooms

over Creamy Mashed Potatoes

and Green Beans with Red Pepper Infused Olive Oil




Before you begin, bring the meat to room temperature & turn the oven on to 450 degrees.

1.)  Chop Potatoes (while boiling water in a large pot).  Add 1T salt.



2.)  Season all sides of each filet with Pepper & Garlic Salt
3.)  Wrap each filet with a strip of bacon, & secure with a few toothpicks.
4.)  Melt 3T. of Butter in a saucepan.  Add sliced, cleaned mushrooms. Top with lid.




5.)  When the water is boiling, in the large pot, add potato pieces.
6.)  Microwave a package of Steam-In Green Beans for 4".  Leave in microwave.
7.)  Melt a stick of butter in a large skillet over Med-High heat, for the filets.
8.)  When the pan is really hot, sear every side of the filet.



9.)  Put them on an oven proof skillet, pour the butter on top of the filets, and bake.

10.)Check meat, several times, until meat thermometer reaches desired temperature.
      (These took 20" to reach Medium Rare.) 

11.)When filets are almost done & the potatoes are fork tender, drain the potatoes. 
12.) (Remove bag of green beans from microwave.) 
13.) Place a large bowl, with 4T butter and a big splash of cream, into the microwave to melt.            Add the potatoes to the bowl.  Mash, first, with the electric beaters, and then beat on full            speed, adding salt and cream, as needed.


14.) Open bag of Green Beans, add a pinch of salt, and a dash of Red Pepper Infused Olive Oil, & gently toss.

(Plate with Mushrooms on top.)
