4 oz. (4 thick slices) of Fresh Mozzarella cheese
20 Grape Tomatoes
1 Red Onion
Pesto (recipe below)

2 Cups Baby Arugula Leaves
Salt & Pepper
(& 4 additional teaspoons of Olive Oil)
(& 4 additional teaspoons of Olive Oil)
PESTO:
2 Cups Fresh Basil Leaves
2 Large Cloves of Garlic
2 Tablespoons Pine Nuts (optional, but normal recipe)
(Blend in food processor, blender, or mortar & pestle.)
Add:
1/2 Cup of Finely Shredded Fresh Parmesan Cheese &
1/2 Cup of Extra Virgin Olive Oil
(Blend Until Smooth.)
