Homemade Teriyaki Sauce

3 cloves garlic finely minced (3 teaspoons)
2 teaspoons finely mined fresh ginger
6 green onions (white parts, finely minced)
1/2 Orange (juice, and 2 teaspoons zest)
1/2 cup chicken stock
1/2 cup soy sauce
1/2 cup brown sugar
2 teaspoons rice vinegar
2 Tablespoons AJI-MIRIN
1/2 Tablespoon Cornstarch whisked with
1/4 cup pineapple juice

1. Make a paste of the garlic and ginger.

2. Add all ingredients, except the cornstarch and pineapple juice, in a bowl.

3. Whisk well.

4. Pour into a medium saucepan, and cook over Medium-High heat until it boils.

5. Then, reduce the heat to Medium-Low, and simmer for 2 minutes.

6. Whisk together 1/4 cup of pineapple juice with 1/2 teaspoon of corn starch (until completely dissolved).

7. Whisk, quickly, into the sauce.

The sauce will thicken within 2 minutes.

It's that easy, and it is better than many restaurants' Teriyaki Sauce.
